Last week we had some tropical temperatures here in Belgium. The kind of weather that makes you want to sip rosé until late and talk endlessly about life with friends. Luckily for me I teamed up with Iittala to host a cosy dinner party in light of their Reset The Table campaign. So on thursday I put on some Latin music, cleaned my house, shopped some fresh ingredients and the aforementioned rosé and some beautiful pink and red summer flowers to contrast the beautiful dotted blue Teema plates from Iittala. (Which you can win later today on my Instagram!)
On the menu were two yummy recipes from the new “Easy Nordic” cookbook from chef Dagny Ros. A couple of weeks ago I had the pleasure of attending a cooking workshop with Dagny for Collishop and was introduced to her way of cooking and focus on togetherness. No nonsense recipes that allow you to spend more time with your guests than in the kitchen? Yes please! Back then, I tasted her “Viking soup” recipe, an amazing flavor bomb of red beets, sweet potatoes and apple sauce. It’s divine. So I immediately knew I wanted to make this soup as my starter. The fish taco’s were a perfect main for a hot summer day (albeit less photogenic), and before we knew it, we ate all the food and emptied the bottle of wine and went on chatting on my terrace.
